Once dried, the parchment coffee must "rest" for 90 days in a temperature and humidity-controlled room.  This additional time allows the seeds to fully develop before going to the next step, dry milling. Dry milling removes the final thin skin from the seed and sorts the seeds into size and grade (quality level). The end result is green coffee ready for roasting.
